Showstopping Australian-first venue unveiled for next gen crown

7 May 2026: Crown Melbourne is set to elevate the city’s dining scene, announcing the arrival of Mott 32 – one of the world’s most celebrated Chinese restaurants – opening its first Australian venue. Adding to the excitement on Southbank’s Riverwalk, Crown will also unveil a new waterside gastropub later this year.

The venues are part of a $200 million redevelopment of the Southbank property designed to attract the next generation of guests and tourism, featuring more than 15 new restaurants, bars and casual eateries, a revitalisation of the Riverwalk, and a major upgrade of the theatre, now known as Crown Live.

Recognised by the MICHELIN Guide, Asia’s 50 Best Restaurants, the Tatler Dining Guide and international design awards for its stunning interiors, Mott 32 will open in March 2027, marking a major coup for the city’s dining scene. An icon of modern Cantonese cuisine, the Hong Kong-founded Mott 32 has locations across the world, including Vancouver, Singapore, Las Vegas and Seoul.

Mott 32’s signature 42-day apple wood roasted Peking duck is legendary – prized for its incomparable crisp skin and theatrical tableside carving. The experience is complemented by perfectly executed dim sum, an impressive drinks list, and standout dishes such as smoked black cod, Iberico pork char siu glazed with mountain honey, premium wagyu and seafood.

Mott 32 Founder, Malcolm Wood, said:

“We’ve always positioned Mott 32 to show that Chinese cuisine belongs on the same stage as any cuisine in the world, in the top tiers of the most discerning global cities. Melbourne has been on our wish list for years thanks to its dynamic energy and global outlook. Partnering with Crown to bring this vision to life is a real honour, and we’re extremely excited about the future.”

Crown’s recently announced riverfront gastropub can be revealed as Bellevue Bar & Terrace, set to open in a prime waterside location in November. Opening directly onto the Riverwalk, Bellevue will offer a relaxed, welcoming space, designed as a go-to meeting place by day – and transitioning to a vibrant nightlife destination in the evening.

The sprawling venue will serve elevated pub favourites in a social setting, with large screens showing major sporting moments. Its waterside position and welcoming layout are expected to make it a precinct drawcard for diners, sports lovers and those looking for a cold pint throughout the day and well into the evening.

Crown Melbourne CEO, Ed Domingo, said this latest announcement brings globally renowned dining experiences to Australia for the first time – exclusive to Melbourne.

“This next wave of openings signals our ambition to reimagine Crown Melbourne as a world-class entertainment destination for the next generation of guests and Melburnians. Building on a proud history of securing Australian-first brands alongside standout local icons, we’re delivering experiences you won’t find anywhere else in the country – right here on the Southbank riverfront.”

Further venue announcements will follow as the transformation of Crown Melbourne continues throughout 2026 and beyond.
